The cassatella is a typical dessert of the city of Agira with a thousand-year history, of which the Spanish culture is certainly the most probable mother of our cassatella. Since there are no written sources on the birth of cassatella, we can only refer to ancient oral and empirical sources, what is certain is that the cassatella of Agira was born from the mixture of poor ingredients (the typical filling of cassatella was originally ricotta) mixed with ingredients linked to the landed nobility, such as almonds and cocoa, linked in turn by another poor ingredient such as chickpea flour. Ideal to accompany tea or to take a small sweet break during the day.
