The baked cassata

The baked cassata is the ancestor of the current “Sicilian Cassata”, as originally the cassata consisted of a pastry shell filled with sweetened ricotta and then baked. According to some hypotheses the dessert has Arab origins, according to others its origins are linked to the Romans; what is certain is that it is a very ancient dessert. The baked Sicilian cassata consists of a shortcrust pastry shell, with a sponge cake base inside and filled with ricotta and dark chocolate chips. Once baked, it is cooled and dusted with icing sugar.

Flour, powdered almonds, lard, icing sugar, eggs, lemon zest, sheep's ricotta, granulated sugar, dark chocolate chips.
